With passion and tenacity, we produce all the vegetables that we use for making all the meals we serve at Follonico.
In the early morning we go shopping in the garden, picking all the ingredients for the preparation of the breakfast menu. In the afternoon, 3 times per week, we select the vegetables to cook at dinner for our guests.
We fertilize our soil only with the compost produced on site with all the prunings, kitchen waste and manure gifted by our horses and donkey. Due to lack of water source, we only use drip irrigation system.
The evident climate changes make the challenge of growing own vegetables harder than in the past. Late frost, torrential rain and severe droughts oblige us to multiply our efforts and, more often, to re-do all the job again.
But we will not surrender, only doing what we are doing we can guarantee to our family and guest the quality of the ingredients we bring to our tables.
