To our eyes, the olive tree represent at the same time the mystic and artistic shape of the farming.
In nature this plant is born as a bush, and it takes his status of tree thanks to the neverending job of the men that, with the yearly pruning, sculpt its shape in order to maximize the yeld of the olive production.
Thanks to the olive production, at the end of October, we are able to make an excellent Extra Virgin Olive oil that, of a cold press milling in the very first hours after the harvest, has a high volume of polyfenols and at the same time a very very low acidity.
We use our EVO oil mainly in our kitchen, either for the family and for all our guest. The EVO oil is the base of all our cooking. Some years we produce a bit more than we need, and we are happy to sell it to our amazing guests.
